Xâllî's tacos al pastor
Tacos al pastor is definitely one of our favorite kinds of tacos. The thinly sliced pork marinated in delicious sweet and tangy sauce, then roasted to perfection and served with fresh pineapple, cilantro and chopped onions, makes it the perfect meal for any day of the week.
INGREDIENTS
- 1 pound boneless blade-end loin or sirloin pork roast
- 1 Xalli's Mexico city pastor pack for 4 people
- 1/4 Fresh pineapple (optional)
- 1/2 White onion
- 1/4 bunch fresh cilantro
- 1 lime cut in wedges
- Corn tortillas
DIRECTIONS:
Step 1
Using a very sharp knife, slice the pork as thin as possible.
Split the sides of a zip-lock bag and place one slice of meat inside bag and pound with the bottom of skillet or a meat pounder until less than 6ml thick , transfer to a bowl and repeat with all the meat.
Step 2
Season the meat with salt and pepper
Step 3
Add Xalli's pastor marinade to the meat bowl and toss carefully until every piece of meat is evenly coated.
Refrigerate and let marinate at least 4 hours.
Step 4
Heat a skillet or grill to high heat, sear each slice of pork until cooked through about 2 to 4 minutes or... if you want to go all out and build your own "pastor trompo" cut a piece of pineapple or onion and place in a cutting board to use as a base, with the help of a long skewer pile the meat on top of each other and roast in the oven at 400 degrees C for about 15 minutes, turn the oven to broil brush the meat with the dripping juices and cook for another 5 min until the sides caramelized.
Step 5
Roughly chop the cooked pork and serve up hot on a warmed tortilla topped with freshly chopped cilantro, Xâllî's pickled pineapple, diced onion, spicy salsa like our delicious salsa taquera and a lime wedge.
